The fun thing about creating your own College or University is that you get to make up all your own classes. :) My classes are very informal.

When I first started, I made a list of all the things I was interested in. Then I explored other college websites, read their class descriptions and borrowed some of the books mentioned in their syllabus. Then I made a list of classes and descriptions of what I wanted to learn, along with a list of good books to read.

I borrow so much through inter-library loan, that one of my libraries keeps a crate with my name on it under the desk, to hold my requests until I pick them up.
Hands-on learning:

When I wanted my own kayak, I signed up to build one through a program at the Lake Champlain Martime Museum. I've also built my own snowshoes and house because I wanted to, and had the time thanks to unschooling.

Whenever I'm interested in something, I get some hands-on experience. It's the best way to learn!

My next experiential learning (good buzzwords to use) experience will be to thru-hike the 5,000+ mile (8050 km) Eastern Continental Trail from Key West Florida to Newfoundland, Canada. When I get back, I'm thinking of an interesting job along the lines of the National Civilian Conservation Corps.

If you want to get hands-on learning, check out your local Department Of Employment And Training. They have lots of tests you can take to figure out what you want to do with your life, a huge database of local jobs available, information on technical school and jobs corps centers where you can learn trades, and much, much more.
Time I spend on learning:

One of the reasons I detested school during the whole 2 1/2 grades I went, is because they try to compartmentalize learning. This is not how you learn best. Think back to how cranky you were in school when the bell rang and you had to move on to something else, just when you were getting interested.

You learn best by being free to learn whatever you want, whenever you want. Some days I spend building my house, some I spend with my nose in a book the whole time, only coming up to eat, and some days I just lounge around in my pajamas all day..

I don't schedule when I'm going to learn something, and only study when my schedule says. How could you? I find it hard to turn a corner and not learn something new.

I find it incredibly sad that the average college graduate only reads 2 books a year after graduating school. What do these people do with their lives?? Below are some of my favorite books. Read more! :-)
